Chef Takeshi Shibata – Short Story

The story begins in the city of Tajimi in Japan. Takeshi Shibata, a very determined man, has a vision and a dream to be a great chef and pâtissier. He started out small, very small, as an assistance for a chef in Japan. A true passion fueled him to be hardworking both inside and outside of the kitchen. Some days, he would even go home and practice piping cookies with his toothpaste. His hard work paid off and he was off to France. Takeshi continued to learn more and more while in France and began to work there not long after. He was able to gather knowledge of the complex characteristics in French desserts and had grown used to the high quality ingredients. After continuing to live, learn, and work in France, an idea struck him.

Takeshi Shibata had an idea, a great vision. The perfect fusion of Japanese and French desserts. The (insert characteristics of French desserts) meets the technique, taste, and unique ingredients of Japanese/Asian desserts. Using his understanding of Asian desserts, he could make delicacies that presents the taste of French bakeries in a way that the people back home could enjoy by modifying some parts like reducing the sweetness, and adding more flavors and texture. He set off to bring his vision to life. His first ever dessert that is still his prized creation to this day is the Caramel Éclair which is known here as the Caramel High. He continued to find more ways to combine high quality French ingredients with unique Japanese ingredients using techniques from both nationalities. This led to the creation of more and more desserts until he eventually able to open up a shop in his hometown Tajimi in 1995. Since then, Chez Shibata 365 has grown in popularity. More and more people discovered and loved his desserts which led to him being able to open more branches. There is a variety of choux pastries, cakes, mousse, and tarts that fulfilled his vision of the perfect fusion for everyone in Asia to enjoy. Now, Chez Shibata 365 has 10 branches total in Japan, Shanghai, and Thailand.

Recently, Chez Shibata 365 opened a branch in Bangkok, Thailand. The runners of this branch found Chez Shibata 365 while on a trip at Nagoya and loved the taste, quality, and idea of Takeshi Shibata’s desserts. This gave them the idea to open a branch in Thailand that would introduce Thai people to this fusion and fit the taste preferences of Thai people. French desserts are too sweet for Thai people and Thai people love Japanese desserts, so they aim to make the desserts at their branch just right. They were able to meet Takeshi Shibata to discuss their idea and soon realized that they had the same visions for this new branch. Takeshi Shibata was already fond of Thailand and supported the idea. Their incredible cooperation led to the branch being open on (Mar8,2019) at the Nikko Hotel in Bangkok. Some desserts were kept the same, some were modified, and some were cut out. There are signature desserts that were kept the same such as the Caramel High/Caramel Éclair, Mont Blanc, and the Mille Feuille. Some desserts were modified such as the Matcha Queen, Yuzu Tart, and the Chocolate Signature. The desserts that were modified kept the same idea and components, but the name, taste, or appearance may be changed.

Chez Shibata 365 Bangkok – Our Journey

Chez Shibata 365 first arrived in Thailand on the 3rd floor of Hotel Nikko Thonglor—a small Japanese–French pastry shop where we were still discovering the best way to serve Thai customers. What we did know from the beginning was simple:
we wanted people in Thailand to experience pastries crafted with sincerity and exceptional care.

Soon after, we opened our second branch at Siam Paragon. However, the COVID-19 pandemic forced us to temporarily close both locations. During that time, we moved to the smallest shop we had ever operated—at The Racquet, Sukhumvit 49.

Despite the challenges, that period taught us something meaningful:
cakes will always be symbols of love and connection.
Many customers sent our pastries to loved ones they could not meet in person. Sweets became a language of care in the middle of crisis.

When life began returning to normal, we reopened at Hotel Nikko with a renewed mission:
to transform every menu item into a gift that carries happiness.

As our gift collections continued to grow, the space eventually became too small. This led us to our current home on Sukhumvit 38.

At Sukhumvit 38, we expanded our offerings with simple, delicious single–dish meals made from thoughtfully selected ingredients. The shop also features an outdoor area that is pet-friendly, allowing families to enjoy their time together—including their furry companions.

 

Who We Are – Chez Shibata 365 Bangkok

Chez Shibata 365 Bangkok is more than a cake shop—it is a true Japanese–French pastry specialist where craftsmanship, service, and thoughtful delivery come together. While our flavors and quality speak for themselves, what many customers may not realize is how deeply we focus on service, speed, and reliability in every part of our work.

We are the shop people rely on when they need a cake urgently.
Whether it’s a simple cake, a premium gift set, or an elegant box worth tens of thousands of baht, we provide same-day service across Bangkok and surrounding areas. Our team can arrange fast delivery with our dedicated drivers to ensure that every cake reaches the customer beautifully and safely.

To us, the location of our shop is not what defines us.
What matters is that we can serve customers anywhere, including the growing number of customers in upcountry provinces. Many customers who live outside Bangkok now choose to order our cakes to enjoy at home. For these orders, we use cold-chain refrigerated transport for selected menus that can travel long distances without compromising quality.

Every menu we create is designed with two priorities:

  1. Taste comes first

  2. Transport safety comes second

If a product needs to travel far, we will immediately switch it to a special packaging designed to withstand movement and protect the delicate cake inside. We treat packaging as seriously as we treat recipes—because deliciousness doesn’t matter if the cake arrives damaged.

We also prioritize ingredients with health and safety in mind. There are shortcuts that could make long-distance shipping easier, but if those ingredients compromise the well-being of our customers, we simply will not use them. Quality and health always come before convenience.

Over time, we discovered that many customers could no longer enjoy regular cakes due to health restrictions. That is why we developed new options—gluten-free cakes, low-sugar recipes, and non-dairy desserts—so that everyone can enjoy a delicious cake regardless of dietary limitations. They may not always be as visually perfect as traditional cakes, but they go through countless rounds of testing to ensure that the flavor, texture, and storage conditions meet our standards.
